Celebrate New Year's at Wynn Las Vegas
It's Not the Same Auld Lang Syne

LAS VEGAS, Dec. 20 /PRNewswire/ -- To bid farewell to the old year and ring in the new, Wynn Las Vegas (3131 Las Vegas Boulevard South, (702) 770-7000) the latest luxury destination resort and casino from visionary Steve Wynn, invites guests to celebrate in style. This New Year's Eve, seven of Wynn's star chefs will dazzle guests with sumptuous a la carte and prix fixe menus. To toast the New Year, Wynn restaurants Alex, SW Steakhouse, Tableau, Daniel Boulud Brasserie, Okada, Country Club Grill and Bartolotta Ristorante di Mare will give the old year a proper send-off while celebrating good fortune ahead.

Alex -- At Alex, Chef Alex Stratta will be offering a magnificent seasonal New Year's menu, a delectable six-course holiday feast inspired by the flavors of the French Riviera. Guests will savor the Roasted Sea Scallops with cauliflower puree and fresh white truffles; Hot and Cold Foie Gras with winter spices and apple caramel; Roasted Turbot with black truffles, toasted almonds and salsify; and Braised Short Ribs of beef with potato gnocchi and red wine sauce. An early seating offering four courses will begin at either 6:00 or 6:30 p.m., with a prix fixe menu for $120 per person. The five-course Gala seating starts at 9:00 p.m., with a prix fixe menu for $295 per person. SW Steakhouse -- Chef Eric Klein brings his native Alsatian flair to a holiday menu of classic steak house cuisine. As diners gaze out at Wynn's extraordinary Lake of Dreams, they will enjoy a marvelous succession of dishes including Shellfish on Ice; Eric's signature Pear Salad with baby arugula and prosciutto; Foie Gras Saute; Lobster Thermidor, Beef Wellington with sauce Perigourdine and "The Last Great Dessert of 2005." After dinner, join fellow diners on the dance floor and count down to a New Year that explodes with a sound and light spectacular on the Lake of Dreams. As elegant as a flute of the finest champagne, Tableau will delight this New Year's Eve with a marvelous array pf chef Mark LoRusso's inventive American cuisine. High points of the evening include indulgent Golden Osetra Caviar "Chip and Dip", Parsnip and Black Truffle Soup with dayboat scallop; Chilled Maine Lobster with tangerine vinaigrette; Crispy Skin Black Bass with white truffle and creamed salsify; Roasted Kobe Ribeye with au gratin potatoes and wild mushrooms with a tasting of Tableau desserts. Complete a perfect evening with dancing to live music in the dining room while taking in the spectacular views of the surrounding pools and landscaped gardens. Tempting choices will include, Tartar of yellowfin tuna with black truffles; Sea Scallop and Lobster Chowder; John Dory with chanterelle crust; Tournedos of Beef Rossini with porcini gratin Dauphinois and a lavish tasting of fruits and chocolates. In the adjoining bar and lounge, guests are invited dance into the wee hours. Early seating is at 5:30 or 6:00 p.m. and is a la carte. Okada's elegant Japanese garden setting in full view of a cascading waterfall makes for a glorious backdrop to dance and dream of what the coming year will bring. These include the decadent Shrimp, Maine Lobster and Stone Crab Cocktail; Lobster Bisque; entree choices of New York Strip, Black Sea Bass or Prime Rib of Beef with caramelized onion and bacon, and a parade of showy side dishes that will please even the most discerning palate.
